Proteins are polymers of 20 amino acids joined by peptide bonds. Essential amino acids cannot be synthesized and must come from diet. Proteins serve as enzymes, hormones, structural components (collagen, keratin), and transporters (hemoglobin). Insufficient protein leads to muscle wasting, impaired immunity, and kwashiorkor in severe cases.
